- Improving the quality of the assessment of food samples by combining absolute and relative information
Bernard De Baets (Universiteit Gent) Co-authors: Raúl Pérez-Fernández, Marc Sader Abstract: A classical problem in food science concerns the assessment of the quality of food samples. Typically, several panellists are trained extensively on how to assess the quality of a given food sample. Unfortunately, this training is usually expensive, and, thus, it is common to invoke untrained panellists searching for an additional source of information. Untrained panellists are not able to assess each food sample individually, therefore, they are usually asked to rank the food samples instead. In this presentation, we will explain how we can combine both types of information in order to improve the quality of the assessment of food samples.
